A CLOSER TASTE
About the dish
Prawns in this risotto are accompanied by prawn bisque sauce. The seafood theme continues in both the main ingredient and the sauce. Choose it when you want a prawn main with a rice base rather than pasta or a vegetable side.
Flavour and serving
Bisque carries the prawn flavour into the rice. Taste the rice on its own, then with a prawn to notice the shared direction of the whole serving.
When comparing seafood mains, risotto differs from salmon or sea bass because rice and prawn sauce form its base. An extra side is therefore a matter of appetite. Taste a spoonful of rice before trying the prawn, then combine them. Notice how the bisque continues the seafood direction even in a bite without a whole prawn.
What to try alongside
For comparison, the hot starters include tiger prawns in cream sauce. They have a different accompaniment and no rice base is listed for that dish.
