About the dish
Chicken liver meets butter and dried apricot in this starter. The soft pâté gains a fruity accent, while tartine bread brings everything together in one bite. Try the pâté on its own, then with the apricot to compare the savoury base with the sweetness of the dried fruit.
Flavour and serving
The apricot is a distinct part of the plate. Adjust its amount on the bread to emphasise the fruit or keep the pâté in the foreground.
Unlike the Don Hamon meat assortment, pâté is chosen for a soft spread that works with bread. Tartine is already included, so try the complete serving first. For a tasting for two, a vegetable plate offers a contrast: suzma and herbs take the place of the fruit accompaniment, while the vegetables feel different from the creamy pâté.
